Favorite color: I really like green. I also really like red, a deep red.

Favorite food: I love cheesecake, and it's gotta be nice and fluffy. I also really like caesar salad. I love spicy chicken curry and I really like black beans, but they've gotta be salty. I also quite enjoy muffins, I love muffins, and um, I also like steak, medium. If I have to eat eggs, they have to be sunny side up, kinda happy smiley.
Favorite movie: It might be Breaking the Waves. I like the Ali G. shows, it's English, it's British, it's crazy.
Favorite Book, what kinds of books: I really like all the fantasy, science fiction things like Lord of the Rings, Harry Potter, but sometimes I've got to come back to earth and read something really realistic. I like poetry a lot. My favorite writer is Norwegian, Jan Kjaerstaed. Homo Falsus or the Perfect Murder is my favorite book of his.
Favorite smell: the smell of star anise, it smells like licorice. I also really really like the smell of apple trees and since I'm a sailor, I love the smell of the ocean.

What did you do before you worked on the PC?
I graduated high school with a bit of luck and then I sailed on the training ship Danmark. Then I worked different jobs in Denmark for a while to get some money. I worked as a gardener, a bartender, and I was cutting Christmas trees! I also taught music and Danish grammar and geography for second and third graders in public school. Then I moved to London and worked in a kitchen for a while. Then I went backpacking in Thailand and Malaysia, South East Asia, and then I went back home to Denmark and I worked some more... I went to University; I studied Scandinavian language and literature. Then I got really bored and I had to go back to sea and I went to Lunenberg in the summer of 2002. I worked on the ship for the whole summer and I got offered a job on the next voyage and here I am.

Where's the most interesting place you've ever lived or visited?
Before this trip, I was in Morocco and I really enjoyed it though it was a little scary. I spent time in Casablanca and I went to the old capitol, Marrakech. I think on this trip Pitcairn was definitely the most interesting place I went to, just because it's so remote and still it's a community working out in their own way. They have more people than on Palmerston or any other small island, still it's so far away from everything. And I kind of got hooked on the whole Bounty story, however I didn't like the big spiders and I hurt my bum cause of sliding off a big rock...I didn't like that either.

What's the weirdest food you've ever tried?
Crispy fried ants, salted, very tasty, they're a little sour. I think the Vanuatu Laplap (a dough made from Taro root) freaked me out a little bit, I swear I found a chicken toe in it, that might have been the reason.

How many languages do you speak? How did you learn them?
I speak Danish, I was born in Denmark. English, we learned that in school in Denmark. German, we learned that in school too. I used to learn French but it's been a very long time since I used it. I studied Swedish and Norwegian in University. I understand some Spanish, but mostly if someone is talking to me, I don't speak it though.

How old were you when you first went to sea?
I was 19.

How long have you been working on the Picton Castle?
Since the summer of 2002, June 2002. But I went home for the winter and then came back in March of 2003.

How did you wind up working on the Picton Castle?
My best friend Maria was sailing on it in the Tallships festival, 2000. I guess she thought it was time for me to go back to sea.

Was there a moment when you knew you wanted to work at sea or you wanted to work on the Picton Castle?
I guess from the moment I first started sailing I knew that at one point I would probably go back, and I guess it wasn't until I actually got offered the job as a cook that I realized this might be a future for me at least for the next couple of years.

What do you like best about working on the Picton Castle?
Well, I like the fact that I have a lot of freedom, I pretty much decide what I want to do, what I want to cook and what I want to buy. I have a budget but it's very much up to me what I want to spend the money on. I also like the fact that I'm planning my own menus and I'm my own boss.

Favorite jobs?
Even though we're halfway through, my favorite job is still cooking. Actually, when we go into port or when I have time my favorite job is probably to furl sail.

Least favorite jobs?
Provisioning, I hate provisioning...and cleaning the freezers.

On this world voyage, where was your favorite place and why?
Still, I think it was Pitcairn because I found that very unique. Funwise, I think Rarotonga was really fun but that was because I had a really cool scooter. Tonga was fun too, I did some sweet diving in Tonga. It was a nice spot.

What are you most looking forward to on this voyage?
Right now, Cape Town is the highest of my expectations because my friend from Denmark is coming to meet me there. I'm actually looking forward to going to Lunenberg because I know there'll be friends and family to meet me, but it's also the end of the voyage so it's a little frightening as well.

How do you think you changed during the voyage? What did you learn about yourself?
I learned that it's really important that you say whatever you want to say. You never know when it's too late. It's important that you show your feelings and tell people what you want to tell them before it's too late, before you miss the opportunity. Life is about taking chances for me. I've also learned that a lot of things, you don't realize how much they mean to you until you're gone, until they're gone. You don't realize how much you miss your family until you leave. Friends and family have become really important to me, keeping in touch, trying to follow whatever they're doing at home.

What do you miss the most from home or from land in general?
I guess what I miss the most is having my own place, having my own space. I sometimes miss the freedom, not that I don't have freedom here but I can't go anywhere. I miss making my own decisions about where I want to go and what I want to do and who I want to hang out with. It's not a problem at all, but that's what I miss about land.

What's your family like? How many brothers and sisters do you have? Pets?
I have one brother and one sister and a dog. My brother's name is Lars, my sister's is Anja, and the dog's name is Bertha.

Describe your job on the ship.
I am the Cook, I cook food. I clean the galley and I do the provisioning, that means picking out, ordering, paying for, and stowing away all the food. Usually it also includes going to the local market for fresh produce, vegetables and fruit.
